LEARN TO MAKE PASTA FROM SCRATCH

Make pasta
like a “Sfoglina”

We will make pasta from scratch to every lesson. In this way you will have the chance to practise and improve or to catch up if  you chose a drop-in class.

LESSON 1  Basic sfoglia dough and how to cut it into some of the most popular shapes: pappardelle, maltagliati, farfalle, tagliatelle, lasagne. Plus ciriole and strappatelle (flour and water dough typical of Central Italy).

LESSON 2  Green tagliatelle (typical spinach dough from Emilia-Romagna, northern Italy) and Umbrian white ragù (meet ragù with herbs and no tomato from Central Italy).

LESSON 3  Traditional tortellini (my family’s Christmas recipe).

LESSON 4  Roasted butternut ravioli with Amaretti and home made balsamic vinegar  glaze (typical recipe from Mantova).
