It is not an ordinary cooking course.
It is a journey through authentic Italian traditional dishes, from Umbria, the region I grew up in as well as dishes from the whole country.
I will share my personal recipes with you and all those that I collected from my family, friends and travels during the past years.
The classes are designed for anyone who wants to discover authentic Italian cuisine and for all those Italians living abroad who are missing the scents and flavours of their homeland.
You will be able to cook dishes that are hard to find in restaurants.

“HOW TO BECOME A SFOGLINA” HOME MADE PASTA COURSE.


LESSON 1 : how to make a basic sfoglia dough and how to cut it into the most popular shapes: pappardelle, maltagliati, farfalle, tagliatelle, lasagne. Plus ciriole and strappatelle (flour and water dough typical of Central Italy).
LESSON 2 :
how to make green tagliatelle (typical spinach dough from Emilia-Romagna, northern Italy) and Umbrian white ragù (Central Italy).
LESSON 3 :
how to make the real tortellini (family recipe).
LESSON 4 : how to make ravioli with butternut, Amaretti and balsamic vinegar (typical recipe from Mantova.


“THE FOUR PILLARS”…DON’T CALL IT COMFORT FOOD!

LESSON 1 : from the Italian popular tradition, a triumph of stuffed veggies prepared our way. Zucchini with meat filling, bell peppers with tuna and mediterranean herbs, stuffed aubergines Sicilian style (cheese, cherry tomatoes and other goodies). Special guest: Her majesty the Sicilian Caponata with a surprise. 
LESSON 2 : you will learn the basics for a good risotto, step by step. We will go through three different kinds of risotto: risotto alla Milanese, risotto with Porcini mushrooms, risotto alla boscaiola (sausage, mushrooms and peas, typical of the the mountainous region of Central Italy).
LESSON 3 : You will learn to cook an authentic Ragù. Forget what you ate at the restaurant. During this lesson you will learn also how to make the perfect gnocchi to be seasoned with your ragù.
 LESSON 4 : Mixed fry! Italy has an old tradition of fried food. Every region has its own. In this lesson you will learn how to make Supplì Roman style, Cremini from Abruzzo (small cubes of fried custard), fried herbs (sage, rosemary) and Panzerotti from Puglia.
