I would never trust that poor fennel that was in my fridge the day before I moved to Johannesburg. That day I made a great pasta with one simple ingredient, instead. You have to try it!
- 400 g spelled pasta
- 1 fennel
- bread crumbs, a bunch
- grated Parmesan cheese
- 1 garlic clove
- extra virgin olive oil
Bring a large pan of salted water to boil.
Chop the fennel into thin slices. Crush the garlic and fry it in a large pan for 2-3 minutes. Add the fennel and a glass of hot water and cook for 15 minutes. Drop the pasta into the boiling water. Meanwhile, toast the bread crumbs in a pan for 5 minutes.
Drain the pasta and sautè with the fennel only for 1 minute. Add a sprinkle of Parmesan, pepper and a generous amount of toasted bread crumbs. Buon Appetito!
