160g cake flour
60ml seed oil
20g unsweetened cocoa powder
100g Amaretti (plus 6-7 Amaretti for the topping)
10g baking powder
The juice of half a lemon
1g grounded cinnamon
Pre heat the oven to 180°C.
Peel, and core 2 pears. Cut each quarter into small cubes (about 1cm). Put the pear cubes into a small bowl. Add the lemon juice and the cinnamon. Mix with a spoon to combine the ingredients. Leave aside.
In a large mixing bowl, beat the eggs and the sugar together with an electric whisk until fluffy.
Add the seed oil and the milk. Whisk for a few more seconds.
Add the sifted flour, the cocoa powder and the baking powder. Mix with a whisk or a spatula to combine the ingredients.
Crush the amaretti in a bag. Add the cookies and the diced pear to the mixture. Mix well.
Grease a 20cm round cake tin and dust the whole surface (bottom and edges) with flour. Flip the cake tin to remove the excess flour.
Peel, core and quarter the remaining pear. Cut each quarter into thinner slices.
Spread the cake mixture in the tin and arrange the pears slices on top. Crush 6-7 Amaretti and use the crumbles to sprinkle the top.
Bake for 40 minutes to 180°C.
