This delicious Sicilian scented pesto needs no introduction. I found those juicy red bell peppers in Jozi Real Food Market and I gave into temptation! You can use it as a dressing for pasta or as a main ingredient in many other recipes! An example? See my baked paccheri’s recipe!
- 600g red bell peppers
- 1 garlic clove
- 20g basil
- 40g pine nuts
- 70g Parmesan cheese, grated
- 50g Pecorino cheese, grated
- 1 cup extra virgin olive oil
Preheat oven to 220°C.
Wash the bell peppers and bake for 20 minutes.
Meanwhile, lightly toast the pine nuts in a skillet on medium heat.
Remove the seeds, membranes and skin from the peppers.
Mix all the ingredients using a stick blender until a soft thick consistency.
